White Bean and Tomato Salsa

While staying with some friends this summer on the North Fork of Long Island, I made this salsa to go with the grilling we were doing.  I just threw it together from what my friends had in their kitchen, with no recipe in mind.


First I halved some farmers market fresh tomatoes.  They are sooooo delicious when they’re in season!  I added some diced onion and 2 cloves of garlic through a Pampered Chef garlic press.  (I love that thing!)


Then I rinsed a can of Great Northern beans and threw them in.  Any kind of bean will do, but I really like the smaller whites ones.



Next I put in some salt, pepper and chili powder.  Mine came from the Savory Spice Shop in Franklin, Tennessee, but they have an online store too.  That place is another personal heaven of mine.


I drizzled in avocado oil and fresh lime juice.  Nothing else screams summer like fresh lime juice!  I also put in some of the lime zest.


Toss it all together, garnish with fresh cilantro and taste it to see if it needs more seasoning….. a little more salt?….some more pepper?….chili powder? or more lime juice? Hmmmm…..


We served it with tortilla chips, but it’s delicious on top of grilled chicken or fish.  These chips are our all time faves!  Food Should Taste Good multigrain chips are non GMO, low in sodium and fantabulous!  We bought this king sized bag at Costco and at Sam’s Club.
