Chicken, Potatoes and Tomatoes…..oh my!

That’s what’s for dinner tonight!

Years ago, I saw a Jamie Oliver show on one of the food channels. This was one of his dishes and it looked soooo good and soooo easy.  The original recipe calls for chicken thighs, but the males in my family are breast men and they give me such a hard time whenevet I try to give them the thighs. Sheeesh!

First I got the pan nice and hot in a 400 degree oven.

Sprinkle salt on the chicken and sear it in some oil. I use avocado oil.

Boil up some baby Yukon Gold potatoes, or Red New potatoes and drain.

Dice up some tomatoes. I had these cherry tomatoes from the farmers market that I had to use up.

Then make a dressing using extra virgin olive oil, vinegar, salt and pepper and oregano. I used white wine vinegar and dried oregano.

Throw the potatoes and tomatoes on the hot tray, and smash the potatoes just a little bit.

Add the chicken to the tray. I cut these big breasts in half first.

Then pour the dressing over everything. Toss it up a bit.

Bake at 400 degrees for 35-45 mins.

It’s a really good dish. I personally like the original recipe with chicken thighs, but I get soooo many complaints from the picky males in this house.
