Dinner Tonight-Mexican Lasagna

When I first moved to Tennessee, I met a Pampered Chef consultant at a Christmas vendor’s fair at one of the schools. (See, I love Pampered Chef….I love their products…and I love cooking! I tried selling it, but I quickly discovered that I’m not a sales person).  So upon meeting the consultant, I was very excited to see what their new products were. You can imagine my thrill when I learned that Pampered Chef offers freezer cooking parties here in TN. I’ve read about freezer cooking in blogs, but never came across any in NY.

This lasagna is adapted from one of the meals I made at a Pampered Chef freezer cooking party.  I created it from what I had in my fridge.

I had leftover taco meat in a container, cheddar, a jar of salsa Verde and corn tortillas.

First you cut the tortillas into strips….

….and place them in the bottom of greased dish. I used spray olive oil.

Then you put a layer of taco meat…..

….and then a layer of cheese.  Then you do a tortilla layer and another meat layer.

Next you pour the jar of salsa Verde over the meat layer….

….and end it with cheese.

I covered it and baked it for about 25 mins at 375 degrees.

Everything was hot and bubbly! Just look at those layers.

I served it with some Trader Joe’s chimichurri rice and a dollop of sour cream…..delicious!

The boys loved it 🙂
